feat(db): Datenmodell, erste Migration und Seed (#003)

Prisma 7.10 mit Postgres-Adapter, 23 Modelle inklusive Rechnungen mit Positionen,
Seed fuer Administrator, Warnregeln und Demo-Daten, Testdatenbank fuer Vitest.
